Why

Math.max() with no arguments returns -Infinity, and Math.min() returns +Infinity. These are the identity values: any real number is greater than -Infinity (so it would win the max) and less than +Infinity (so it would win the min). The seemingly backwards result guarantees that adding any argument produces the correct extreme.
